Ginger cream surprise


  • cup of sherry or brandy
  • 1 small packet of ginger nut biscuits
  • pint double or whipping cream


  • Whisk cream until thick
  • Dip a biscuit in the alcohol for a couple of seconds (no more or it goes soggy!)
  • Spread cream on one side of the biscuit
  • Repeat for each biscuit - first alcohol and then cream
  • Place each biscuit gently next to each other to form a log
  • Cover the log with the remaining whipped cream
  • Decorate with crystallised ginger or chocolate shavings
