Ginger cream surprise
Ingredients
- ½ cup of sherry or brandy
- 1 small packet of ginger nut biscuits
- ½ pint double or whipping cream
Method
- Whisk cream until thick
- Dip a biscuit in the alcohol for a couple of seconds (no more or it
goes soggy!)
- Spread cream on one side of the biscuit
- Repeat for each biscuit - first alcohol and then cream
- Place each biscuit gently next to each other to form a log
- Cover the log with the remaining whipped cream
- Decorate with crystallised ginger or chocolate shavings
